Quince Paste 13/4/13

6 quinces washed and scrubbed cut and cored in ¼ or eighths or however many fit in the casserole dish
1 ½ cups water / proportion to number of quinces (½ cups water = 2 quinces)
2 x 10 minutes in microwave on high for the first cook
Mash it up in blender (must be soft enough to mash with fork)
Keep lid on casserole

Then put in sugar – cup for cup pulp / sugar (I ended up with 1 quince = 1 cup sugar)
2 or 3 x 10 minutes with the lid off and stir in between until it becomes a nice rich orange colour.
You can cook on Med High 10min x 4

Put it in a flat Tupperware dish lined with Glad Bake 2 cm deep and put in fridge OR put in little plastic pots –  great to give away.
